Carrot Cake Scones

Who doesn’t love a flavorful, moist carrot cake? Well now you can have your cake and eat it for breakfast too 😋
Topped with a decadent cream cheese glaze, these scones carry the same warmth as a traditional cake, but with less sugar, making them the perfect accompaniment for your morning coffee.
To make this recipe even better, the scone is vegan. To make the recipe entirely vegan, just swap out the cream cheese for a vegan alternative. Scones are also just much less fuss and mess than a traditional cake. Less time cleaning means more time for eating!

I really do love scones so much. I need to make them more often because they’re honestly so easy to whip up. Including the 10 minute rest time, these only take about 25 minutes of prep before they’re in the oven. Your house will smell heavenly as they bake up. I used pre-shredded carrots and they worked just fine, but if you wanted to freshly shred yours, I think that would add a much better texture to the scones. I really need to make this recipe again…
