Easy Breakfast Recipes

Breakfast is the most important meal of the day. Or so they say. Whether your first meal is at 6 am in the morning before the sun is up or 10 am after things have settled down, it’s important that you’re putting good food into your body. I love an easy toaster waffle as much as the next person, but I’ve compiled a list of my favorite breakfast recipes that I find myself cycling through when I do have those few extra minutes to cook something up.

Easy Breakfast Sandwich

  • 1 Egg

  • Cheese - shredded or sliced will work

  • 2 pieces of Bacon

  • Bread - I like sourdough or French

  1. Pop your bread in the toaster while you fry your egg to your desired doneness. I like mine over-medium, bordering over-hard so you get just a little bit of yolk seeping out but it’s not too messy.

  2. Cook your bacon.

  3. Assemble: Butter toast; layer cheese on bottom piece of toast; top with warm fried egg to get that cheese melting; add bacon and top piece of toast; enjoy.

*Pro-tip: If you didn’t know, you can cook your bacon in the microwave for a quicker and cleaner alternative to stove-top or oven. Place a double layer of paper towels on a plate, lay down 4-5 pieces of bacon in a single layer, making sure they don’t overlap. Place another double layer of paper towels on top. Microwave for 1 minute. Replace top layer of paper towels with a new set, flip so the dry paper towels are on the bottom, and microwave again for another minute. If they’re not as crisp as you’d like, keep microwaving in 15-30 second intervals.

  • 1-2 Eggs

  • Leftover roasted veggies

  • Parmesan Cheese

  1. This is a great meal if you have leftover veggies from last night’s dinner or if you like to food prep ahead of time. Some of my favorites veggies are sweet potatoes, mushrooms, and broccoli.

  2. Reheat veggies in a skillet or microwave if you are short on time.

  3. Fry or poach eggs.

  4. Layer veggies onto a plate, top with cheese, if desired. Add eggs and season with salt and pepper, or toppings of choice.

  5. You can also add meat if you have that on hand as well.

  • Lemon juice

  • Everything But The Bagel seasoning

  1. Toast bread.

  2. Mash and spread half an avocado on each slice of toast.

  3. Drizzle with olive oil and a squeeze of lemon juice and sprinkle on seasonings. This pairs perfectly with a poached egg as well.

Protein Smoothie

  • 1/2 Frozen banana

  • 1/2 cup Frozen fruit - I like using blueberries or a tropical mix

  • Handful of Kale or Spinach

  • 1 cup Milk of choice

  • Protein powder - I love this pea protein from Trader Joe’s

  • Drizzle of Honey

  • Additional supplements if you’d like such as Spirulina, Chia Seeds, Maca, etc.

  1. Combine ingredients in a blender and blend till smooth.

  2. If using a screw top blender, where you invert the bottle to blend, such as a Nutri-bullet, add liquid before powders. This helps the powder blend into the smoothie rather than sticking to the walls of the blender.

Fried Eggs with Sautéed Greens and Tomatoes

  • 2 Eggs

  • Everything But The Bagel seasoning

  • Handful of Spinach or Kale

  • 8-10 Cherry tomatoes, halved

  • Olive oil

  • Lemon juice

  • Parmesan cheese

  • Garlic powder

  1. Heat olive oil in a skillet on medium-low. Add greens and cook. Add salt, pepper, a pinch of garlic powder, and some lemon juice and continue cooking until wilted. Transfer to plate and top with Parmesan cheese.

  2. Add more oil to the skillet and add halved tomatoes. Sauté with salt, pepper, and a pinch of garlic powder. Transfer to the plate.

  3. Spray the same skillet with non-stick spray and fry eggs. Transfer to plate and top with EBTB seasoning (you’ll notice I use this seasoning on everything…it’s my favorite).

  4. I never thought I’d be someone who ate sautéed greens, but I find preparing them like this is actually pretty good.

Breakfast Potatoes

  • 4-5 Baby red potatoes

  • 1 tbsp Olive oil

  • Salt and Pepper

  • Smoked Paprika

  • Garlic powder

  • Dried Parsley

  1. Preheat oven to 425°.

  2. Wash and slice potatoes into wedges.

  3. Place on a foil-lined baking tray and toss with remaining ingredients. I usually just sprinkle an even layer of each spice across the pan.

  4. Bake for 20-25 minutes, or until soft.

  5. For extra crispiness, you can heat some oil in a skillet and pan-fry the wedges after they come out of the oven.

  6. Serve along-side eggs or use as the base for a hash.

Egg-in-a-Hole / Egg-in-a-Basket

  1. Heat a skillet and add butter.

  2. Butter one side of the bread. Using a cookie cutter or knife, cut out a hole in the middle.

  3. Place bread butter-side UP in skillet. Crack one egg into the hole. Make sure you toast up the middle piece you cut out! It’s great for sponging up the extra yolk.

  4. Flip toast and fry to desired doneness of the egg. Add cheese to the top if you’d like or just season with salt and pepper.

Overnight Chia Seed Pudding

  • 3 tbsp Chia seeds

  • 3/4 cup Milk of choice - I like oat milk

  • Vanilla extract

  • Cinnamon

  • Toppings - fruits, nuts, coconut flakes, etc.

  1. Combine milk, chia seeds, a dash of vanilla, and a pinch of cinnamon in a mason jar or air-tight container with a lid. Stir for 1 minute then let sit in the fridge overnight.

  2. Top pudding with toppings of choice and enjoy. You can add the toppings, pop the lid back on, and pack this to-go as well.

Cheesy Scrambled Eggs and Toast

  • 2 Eggs

  1. Heat a skillet on the stove, spray with oil. To use less dishes, I crack my eggs directly into the pan. You can add a splash of milk to make them creamier if you’d like.

  2. Break the yolk and scramble your eggs as they cook. Add cheese and seasoning towards the end.

  3. Toast and butter your bread.

  4. Plate up. You can eat these separate, but they’re also great as an open-faced sandwich.

  • 2 tbsp Maple syrup

  1. Prepare oats according to package instructions.

  2. To a skillet over medium-low heat, add maple syrup and heat till bubbling. Add sliced or diced fruit. Sauté until all pieces are caramelized and soft.

  3. Pour oats into a bowl and top with fruit.
